Chicken thighs baked with white and sweet potatoes

Today’s pictures are just a quick snaps of a dinner we had recently- please forgive the lack of quality, but the dish itself is really good and a perfect idea for a quick meal. Throw everything into the oven and you’ll have a super tasty dish in 30 minutes.

Ready? You’ll need:

chicken thighs
salt
1 teaspoon each :allspice, mustard seed, pepper and sweet paprika
olive oil
1 medium sweet potato
2 medium white potatoes

pesto: bunch of coriander/clove of garlic/olive oil/teaspoon of lemon juice, salt

to serve: coriander leaves, one serrano pepper finely chopped

In a pan heat the spices until fragrant and then smash in a mortar until pulverised. Add olive oil so they form a paste. Salt the chicken thighs well and rub them with the spice paste. Scrub and clean the potatoes, cut into halves and then each half into three wedges- rub in the spice mixture. Put all- chicken and potatoes on the baking paper lined tray. Bake for 30-40 minutes in 190C.

10 minutes before chicken is ready to get out of the oven- blend coriander with garlic,lemon and olive oil so you get the consistency of runny honey. Drizzle over chicken, sprinkle with chilli. Serve!
