Sweet waffles with yogurt and berries

I love lazy mornings. Nothing is better for my mood than long wake up, cuddling in bed, lazy movements and long celebrated breakfast. I cherish those moments so much. Vacation time, with no school and my ability to work any hours I want gives us more of those moments. Few days ago I asked Gaba what kind of breakfast would be her first choice and she asked for sweet waffles. Who doesn’t love them? I picked some fruit from the garden and served them on top of Greek yogurt and a bit of jam I made the night before. Soo good you don’t want it to end.

RECIPE – SWEET WAFFLES WITH YOGURT AND BERRIES

160g all purpose flour
A pinch of salt
50g melted butter
2 eggs, seperated
270 ml milk
100 g sugar

yogurt, berries jam to serve

Combine the flour, salt, sugar, melted butter and egg yolks and about a third of the milk. Whisk until smooth, add in the remaining milk gradually. Set aside.

In another bowl, whisk together the egg whites until stiff peaks form. Fold the whites into the batter.
Lightly brush the waffle iron with butter, ladle the batter over it and close the lid. Let it cook for 4-5 minutes until the indicator goes off, or the waffles are as golden and crisp as you like.

Serve waffles with thick Greek yogurt and berries you love. Or chocolate, or jam. Or however you like it. Happy breakfast is all that matters.
