Warm Pear Salad with Gorgonzola

This weekend I visited a new farmers market- all is organic. Lots of great stuff, I was just bit disappointed with the visual aspect of the place-so vintage, yet no decorations at all, no nice presentation 🙂 One place had wooden cases and baskets- yay 🙂

I cooked and baked few things this weekend, but today I’ll leave you with this warm pear salad. The inspration came from Nigel Slater’s show I watched on BBC- he carmelized pears and walnuts on butter, added some gorgonzola and that was it. I was thinking about that dish all week, not making this because my diet and all 🙂 I finally made it during a weekend and it was perfect. This salad is a bit lighter version- uses coconut oil and has some baby spinach leaves. Still sooo yummy!

Pears-and-Salad

Ingredients:

pears

gorgonzola
walnuts
baby spinach
coconut oil
honey

Peel and core the pears, halve them and put in a bowl of water mixed with lemon juice, so they don’t oxidize. Heat some coconut oil in the skillet and put pear halves in. Wait until they get golden and then turn them. Put some walnuts in the skillet and add about one spoon of honey. Put a handful of baby spinach on the plate, then arrange slices of gorgonzola, pears, walnuts on it. Pour some of that yummy sauce left in the skillet.
