Vanilla sea salt caramels

I am a huge fan of homemade gifts. Well actually I am a huge fan of homemade everything 😉 But we’ll stick to the caramels today. Everything about caramels reminds me of childhood- chewy, sweet and bit of saltiness, all melting in your mouth. With homemade you have your whole house smelling with that goodness. We made a huge batch with Gaba for people that visit our house or work for us and just handed them as gifts. All those “just like my mum made when I was little” comments made our day. For packing we just used white baking paper, we had lots of fun wrapping all the candy.

RECIPE – VANILLA SEA SALT CARAMELS

3/4 cup (180 ml) heavy cream
1 tablespoon vanilla extract
1/2 cup (160 g) golden syrup
1 cup (200 g) sugar
4 tablespoons (60 g) butter, cubed, at room temperature
Maldon salt

First you'll need candy thermometer. And be careful, hot caramel smells nice but can burn you like a devil! Line a shallow dish with baking paper and grease it. Now put the sugar and golden syrup in a thick bottom pan. Heat it but do not stir. You can move your pan in circular move. Check the temperature of the sugar as it dissolves. When it reaches 155 degrees C/310F. Now add cream, butter and vanilla. Stir, and start heating again until it reaches 127C/260F.Pour into the dish and in a minute or two sprinkle generously with Maldon salt. Wait until firm, but not too much. Cut with a hot knife to get nice edges.
