Our family loves a good burger with fries. We don’t like the cheap fast food stuff though. Homemade buns, homemade fries, homemade sauces, lots of crispy greens and the highest quality beef make it unique and “ours”. Still I look for ways to make it even healthier, working on better buns or like this time fries that are made with no gram of fat and are still crispy and super good. I’ve been working with three types of flours and like the results with corn flour best, but rice flour worked pretty good too, so you can also try that. My version- rosemary and garlic is just a mare suggestion, you can go for chilli, spring onion, or even a lemongrass and coriander version. Sky is the limit and experimenting in the kitchen is part of the fun of cooking.
The “burger” was made with graham flour buns with black sesame, steak, romaine lettuce, avocado, halloumi and Greek yogurt and horseradish sauce.
RECIPE – NO FAT BISTRO FRIES
6 baking potatoes100 g corn flour
2 egg whites
6 sprigs rosemary minced
3 garlic cloves
Maldon salt
Preheat your oven to 210 C/ 400 F. Wash potatoes. Cut them into wedges. In a bowl mix potato wedges and corn flour. You can use a sealable bag for this too. Toss them until evenly coated with flour. In another bowl whisk egg whites with crushed garlic and rosemary. Toss potatoes until coated with the mixture. Spread on a baking tray on baking paper, so they don't touch. Sprinkle with Maldon salt. Bake for 25-30 minutes until golden and crunchy.
