I’ve been baking granola for a few years now. It started when I read how much bad stuff is inside those breakfast mixes. I thought baking our own would be much better idea. It’s really easy- put all the ingredients in a bowl, mix and bake. Store in a jar until it’s empty, repeat 🙂 I posted a granola recipe before, this one is a bit different. Let me know if you have a fav one you swear by!
RECIPE – COCONUT GRANOLA
500g rolled oats1/3 cup maple syrup
1/3 cup brown sugar
1/2 cup coconut oil
150 g shredded coconut
500 g mixed nuts and seeds-I use sunflower and sesame seeds, blanched almonds and cashew nuts
100 g large shredded coconut flakes
1 Preheat the oven to 180C. Put all ingredients, except nuts and large coconut flakes in a bowl and mix with a spatula.
2 Line baking trays-I used two- with a baking paper. Put the mixture on them and press with a spatula. Bake for 20 minutes.
3 After 20 minutes add nuts and coconut flakes, stir and bake for another 15-20 minutes -until golden. Let cool. Keep in a glass jar with sealed lid. This amount usually lasts for 2-3 weeks in our household.
4. Serve in a bowl with Greek yogurt and strawberries drizzled with maple syrup.
What a beautiful, light, summer treat! The only problem I would have making this granola would be eating it all at once 🙂
